Summer truffle – Tuber aestivum, extra quality, Switzerland or Italy depending on availability

Tuber aestivum, the summer or Saint John’s truffle, has a delicate woodland aroma with notes of forest mushrooms and hazelnuts.

It pairs beautifully with pasta, risotto, eggs, veal tartare or white-fish tartare. Use it to make truffle butter, mayonnaise, cream-based preparations or cream cheese.

Avoid cooking it, as heat would diminish its delicate aroma.

We recommend ordering between Monday at 1 p.m. and Thursday at 3 p.m. for postal delivery by Friday morning at the latest.

Harvest season: late May to mid-September.
