Your first experience of fresh truffles.
The truffles, the tool and Xavier’s advice: everything you need to discover the pleasure of preparing and serving truffles at home.
Your Discovery Pack
- 50 g of fresh Tuber uncinatum truffles, also known as Burgundy or autumn truffles.
- A stainless steel truffle slicer for shaving thin slices just before serving.
Truffle origin: Switzerland or Italy, depending on availability.
A first taste for two, or a gift for a food lover. For a generous main course, we recommend around 30 g of truffle per person.
Xavier’s tip
The day before, grate 25 g of truffle into 100 g of butter and mix with a fork. Leave to infuse in the fridge for 12 to 24 hours.
The next day, add the butter to your pasta or risotto off the heat, adjusting the amount to your recipe. Keep the remaining fresh truffle for shaving or grating over each plate just before serving.
Let the flavour develop cold; avoid frying the truffle or boiling a sauce that contains it.

Freshness and storage
Enjoy your truffles as soon as possible after delivery. They generally keep for 5 to 7 days in the fridge, depending on ripeness and condition. Wrap them individually in absorbent kitchen paper, replace it daily and check their condition.
