Flavour, tips and quantities

White Alba truffle (Tuber magnatum) has an intense aroma with notes of garlic and Parmesan. We select it for freshness, maturity and fragrance.

Why are our white truffles brushed but not washed?

We gently brush each truffle to remove excess soil without washing it. The thin layer of soil left on the truffle helps protect its aroma during transport and storage.

Just before serving, gently clean it with a soft brush. If needed, dampen the brush slightly, then dry the truffle.

Size does not determine aroma

Depending on the harvest, we favour truffles weighing 10 to 20 g: more accessible sizes offering the full pleasure of white truffle. A large specimen is impressive, but size does not guarantee a better aroma. Larger truffles are available to order.

Xavier’s tip: eggs scented with white truffle

Place raw, whole, uncracked eggs with their shells intact in the same closed container as your white truffle, in the fridge. Keep the truffle wrapped in absorbent paper and change the paper daily. The aromas pass through the porous shells and naturally perfume the eggs.

Use these scented eggs for scrambled or soft-boiled eggs, or in your favourite dishes, including baking. “I like using them in my moist chestnut cake: white truffle and chestnut make a wonderful pairing.” — Xavier

To develop truffle flavour in butter, cream, mayonnaise or cream cheese, leave the mixture in a covered container in the fridge for 12 to 24 hours. Within this time frame, a longer infusion allows more truffle flavour to develop in your chosen fat.

For 100 g of butter: 5 to 10 g of white Alba truffle (Tuber magnatum) or 10 to 15 g of black Périgord truffle (Tuber melanosporum). These are Xavier’s infusion tips; adapt the quantity to your preparation and the intensity you prefer.

The secret with truffles? Use them!

If you have some left, enjoy them the next day or make truffle butter to freeze in small portions.

Origin and freshness

From one truffle hunter to another, with no middlemen.

In Italy, we work with one partner: Raphaël, a truffle hunter who harvests our white truffles with his business partner. After their weekend hunt, we order on Monday morning. The truffles arrive on Tuesday, are checked and dispatched directly. In peak season, we very often receive two deliveries a week.

Unavailable online? Another arrival may be on its way. Message Xavier on WhatsApp to check availability or order a larger truffle. You can also return to this page to check the stock.

Enjoy promptly: usually keeps for 5–7 days in the refrigerator, depending on ripeness and condition. Change the absorbent paper daily.
